GIN / VODKA DRINKS
THE FITZGERALD*
Original recipe by Dale DeGroff
1 1/2 ounces Hendricks Gin
1 ounce Simple Syrup
3/4 ounce Fresh Lemon Juice
2 Dashes Dale DeGroff's Pimento Bitters™
Shake all ingredients with ice and strain into a rocks glass.
Garnish with a lemon wedge.
SINGAPORE SLING (Raffles Hotel, c1935)
1 1/2 ounce (50ml) Beefeater Gin
1/2 ounce (15ml) Lime Juice
2 ounce (60ml) Pineapple Juice
1 tsp Grenadine
1/2 ounce (15ml) Cherry Herring
1/4 ounce (8ml) Cointreau
1/4 ounce (8ml) Benedictine
1 dash Dale DeGroff's Pimento Bitters™
Shake with ice & strain into chimney glass
Garnish with a pineapple wedge and a marinated Cherry. Serve with long straws.
SUEASIA COCKTAIL*
1 1/2 ounce (50ml) Pymouth Gin
1/4 ounce (8ml) Benedictine
3/4 ounce (22ml) fresh lemon/lime juice
2 Lichee nuts
1 dash Dale DeGroff's Pimento Bitters™
1/2 ounce (15ml) Velvet Falernum
Muddle the lichee with the Falernum syrup and add the remaining ingredients and shake well with ice. Strain into a chilled cocktail glass. Garnish with a lichee.
MOHAGANY HALL GIMLET*
1 1/2 ounce (50ml) Absolut Wild Tea
1/2 ounce (15ml) Fresh lime Juice
1/2 ounce (15ml) Grapefruit Juice
1/2 oz (15ml) Honey Syrup (2pts to 1 pt water)
2 dashes Dale DeGroff's Pimento Bitters™
Place the all the ingredients in a cocktail shaker including the quarter of kiwi … with ice and shake well. Double strain into a chilled cocktail glass and garnish with a thin lime wheel.
HAZEL EYES*
2 ounces (60ml) Vodka
3/4 ounce (22ml) Frangelico
1 dash Dale DeGroff's Pimento Bitters™
Shake with ice and pour into a chilled large coupe glass over crushed ice. Garnish with an orange peel
MANHATTAN REDUX*
2 ounces (60ml) Absolut Kurant
1 ounce (30ml) St. Raphael
1 dash Dale DeGroff's Pimento Bitters™
Stir with ice to chill and strain into a chilled cocktail glass. Garnish with a marinated cherry or currants if available
RUSSIAN SPICED HIGHBALL*
1 1/2 ounce (50ml) Gin or Vodka
5 ounce (150ml) Schweppes Russian
1 dash Dale DeGroff's Pimento Bitters™
Build over ice in a highball glass. Garnish with a slice of orange.
SPICY SCREW (Screwdriver variation)
1 1/2 ounce (50ml) Vodka
4 1/2 ounces (135ml) Fresh Orange Juice
1 dash Dale DeGroff's Pimento Bitters™
Cinnamon frosted glass
Mix 4pt cinnamon with 1pt superfine or castor sugar and frost the outside rim of the highball glass. This is best if done well in advance allowing time for the frosting to crystallize on the rim. Build over ice in the prepared highball glass. In the following order; vodka, juice then dash the bitters over the top and stir. Garnish with a orange slice.
COLONY COCKTAIL (Colony Cocktail variation)
1 1/2 ounce (50ml) Vodka
1 ounce (30ml) Southern Comfort Special Reserve
1/2 ounce (15ml) Fresh Lime Juice
1 dash Dale DeGroff's Pimento Bitters™
Shake all ingredients with ice and strain into a chilled cocktail glass. Garnish with a lime peel.
